What it is

Salmon is a rich, oily fish with a deep pink flesh. We cut Scottish salmon to order at the counter, farmed and wild in season, as fillets, sides, steaks and pieces fine to eat raw. Priced by weight, filleted and pin-boned by hand at no charge.

Why choose it

Salmon is forgiving to cook and works from a midweek fillet to a whole side for a table. It takes the grill, the oven, the pan and the air fryer, and it carries strong flavours as happily as a squeeze of lemon.

How it tastes

Rich and buttery, with a firm flake. Wild salmon is leaner and deeper in flavour, farmed is fattier and milder. The fat is what keeps it moist and what carries omega 3.

How to cook it

Roast a fillet skin-side down at 180C, pan-fry skin-side first for a crisp skin, grill or barbecue a side over medium heat, or air fry a fillet at 180C. Cook to just opaque and it stays moist.

What goes with it

Lemon, dill, capers and creme fraiche. New potatoes, asparagus, green beans and peas. Soy, ginger and sesame for a sashimi or teriyaki direction.

How long it takes

A fillet roasts in 12 to 15 minutes, pan-fries in 4 to 5 minutes a side, air fries in 8 to 10 minutes, and a whole side bakes in 20 to 25 minutes. Times vary with thickness.
