Hot smoked salmon from John Ross Jr of Aberdeen: smoked over oak and beech then roasted in the kiln, so unlike cold smoked salmon it comes out fully cooked, moist and flaking. Eat it as it is with a potato salad, flake it through pasta with creme fraiche and dill or fold it into kedgeree. 160g portion, ready to eat.
