Snails prepared the Burgundy way: cooked, returned to their shells and sealed with garlic and parsley butter, frozen in an oven tray of twelve. The snail is the vehicle; the butter is the destination. Bake from frozen for ten to twelve minutes until the butter bubbles, then serve with bread for the mopping, which is not optional. A tray serves two as a starter.
