Wild sea bass is a lean white fish with a fine, tender flake and a clean, slightly sweet flavour. Wild fish are firmer and deeper in taste than farmed, with thin skin that crisps well. The flesh is lean, so it cooks fast and dries if pushed.
At the Barnes counter we prepare it whole and cleaned, trimmed, headed or filleted and pin-boned by hand, scaled as standard or scale on for the barbecue and the salt crust.
Roast a whole scored fish at 200C for 20 to 25 minutes with lemon and herbs in the cavity, pan-fry fillets skin-side down for three to four minutes or steam them with ginger and spring onion.
