Enough fish for four across two dinners. Salmon in portions and a mild white fish skinned and boned so both are ready for the pan, with real-fish fish fingers cut from whole fillets in the shop and crumbed in panko.

The fish fingers bake from frozen and come out as a piece of fish with the species named on the pack, cut from a whole fillet here so you see what the fish is.

Cook the salmon skin-side down in a hot pan for four to five minutes, turn for one. Bake the white fish at 200C for ten to twelve minutes.

Subject to the market. What the counter holds changes with the market and the weather. When a line is short we pack a close substitute of equal value and write the change on the packing note. For special orders we confirm any change with you before we pack the box.

Keep and storage. The box travels chilled with a gel pack. Unpack it into the fridge as soon as it arrives. Eat fresh fish within a day or two of delivery. Most lines freeze well on the day they arrive.

How to cook it

Everything arrives prepped, so each part cooks quickly.

Salmon fillets: a hot pan or a 200C oven, about ten minutes, done when the flesh flakes.
Cod goujons: a hot oven until golden and piping hot through.
Fishcakes: a pan with a little oil, four to five minutes a side.
King prawns: a hot pan until piping hot through.
Fish-pie mix: straight into a pie or a chowder.

Recipe

Weeknight fish pie, for four

You need: the fish-pie mix from the box, 400ml milk, 40g butter, 30g flour, a handful of peas, mashed potato to top.

Warm the milk in a wide pan and poach the fish-pie mix in it for three minutes, then lift the fish out.
Melt the butter in the same pan, stir in the flour and whisk in the poaching milk to make a smooth sauce.
Fold the fish and peas into the sauce and tip it all into a baking dish.
Top with mash and rough the surface up with a fork.
Bake at 200C for about 25 minutes until golden and bubbling.

Storage and preparation

Arrives chilled. Keep everything in the fridge and cook within two days.

Anything you will not get to in time can go in the freezer the day it arrives, wrapped well and used within a month. Do not refreeze anything labelled previously frozen.

Tell us how you want it in the order notes. Filleting, pin-boning and skinning are free, by hand at the counter. If you ask for a fish to be trimmed, headed or skinned, the finished weight comes down accordingly.
