For this cure John Ross Jr adds Lapsang Souchong tea to the wood fires of its Aberdeen brick kilns, so the salmon takes on the tea's dark, resinous smokiness alongside the oak and beech. It is the fullest flavoured salmon in their range and stands up to strong company: rye bread, pickles, a peaty whisky. D-sliced, 200g, serves three to four as a starter.
