Three densities and each one takes a different cut. Tuna loin is close-grained and muscular and slices into clean sheets. Salmon is softer and fatter, so it wants a thinner slice. A scallop is a single muscle with no flake at all, so it goes across into two or three discs.

Oysters last. An oyster opened early loses its liquor and the liquor is half of it.

Nothing here needs heat. What it needs is a cold board and a sharp knife.

Oysters: Louet-Feisser, Josephine or Pembrokeshire.
The tuna, the salmon and the scallops are fixed. If we cannot cut them to the standard this box needs on the day, we will call you before we pack it.

How you want it cut. Tell us at checkout. We trim and skin by hand and it is free.

Weights. Weights are approximate because fish are cut by hand. We pack to at least the weight shown.

Keep and storage. The box travels chilled with a gel pack. Put it straight into the fridge when it arrives. This box is cut for eating raw, so eat it the day it arrives.

Packed by hand at our counter at 18 Barnes High Street.

We buy for the counter first and pack the boxes from the same fish. That is why this box carries a swap list. What is good changes through the week, and choosing well is the job. The packing note inside tells you what changed.

How to cook it

Nothing in this box needs heat. What it needs is a cold board and a sharp knife.

Chill the plates. Warm plates ruin raw fish faster than anything else.
Slice the tuna and the salmon across the grain, about the thickness of a pound coin, drawing the knife back in one stroke.
Slice the scallops horizontally into two or three discs.
Shuck the oysters last and keep the liquor in the shell.

Salt goes on at the table. Add it any earlier and it draws water out of the raw fish as it sits.

Recipe

Scallop crudo with lemon and caperberries

You need: the scallops, a lemon, good olive oil, the caperberries, the sea salt.

Slice the scallops into discs and lay them flat on a chilled plate so they barely overlap.
Dress with lemon juice and olive oil in equal measure.
Halve a few caperberries over the top, add salt flakes and eat it within five minutes.

Storage and preparation

Eat this box on the day it arrives. Fish to be eaten raw does not keep.

Keep it in the coldest part of the fridge until twenty minutes before you slice it. Do not freeze it and then eat it raw. If you change your mind and want to cook it, cook it within two days.

Raw fish is not suitable for pregnant women, young children, older people or anyone with a weakened immune system.

Tell us how you want it in the order notes. Filleting, pin-boning and skinning are free, by hand at the counter. If you ask for a fish to be trimmed, headed or skinned, the finished weight comes down accordingly.
