What it is

King prawns are large, meaty prawns with sweet, firm flesh, sold raw or cooked and shell on or peeled. We sell them by weight at the counter, raw grey shell-on prawns that turn pink as they cook, or ready-cooked to peel and eat. Peeled and deveined by hand on request.

How it tastes

Sweet, clean and firm, with a satisfying snap when they are cooked right. The shell and head hold a lot of the flavour, which is why cooking them shell on and saving the shells for stock pays off. Raw prawns are grey and translucent and turn pink and opaque as they cook. Overcooked, they turn tough and dry, so pull them off the moment they curl.

How to cook it

Pan-fry shell-on prawns in garlic butter, butterfly and grill them, throw them into a stir-fry or curry, or barbecue them on skewers. Cook raw prawns until they turn pink and curl into a loose C. A tight O means they are overdone.

Large raw king prawns pan-fry in 2 to 3 minutes a side until pink, grill or barbecue in 3 to 4 minutes, and cook through a curry in 4 to 5 minutes. They cook fast, so watch them. Times vary with size.
