The 50g tin of Baerii caviar, from farmed Siberian sturgeon, Acipenser baerii, harvested under CITES certification. Small dark grains, smooth and buttery, less saline than the bigger names and better value for learning what you like. Fifty grams serves three to four with blinis and creme fraiche. Keep it cold, open it at the table and use mother of pearl or plastic, never silver.
