Scottish salmon cold smoked by John Ross Jr in Aberdeen brick kilns that date to 1857 and are still fired daily, a method recognised by Historic Scotland with listed status. The fish is cured with salt and sugar, smoked over oak and beech and sliced wafer thin. A 100g pack serves one generously or two as a starter with lemon, black pepper and brown bread.
