Baerii is caviar from the Siberian sturgeon, Acipenser baerii, farmed and harvested under CITES certification. The grains are small and dark with a smooth, buttery flavour and a clean finish, which makes Baerii the natural first step into proper caviar. A 30g tin serves two without ceremony: chilled, on the back of the hand or on a blini with creme fraiche, with a spoon that is not silver.
