A kiln roasted side of salmon from the Wimbledon Smokehouse: boneless salmon lightly brined, then hot smoked in south London so the fish gently cooks as it takes the smoke. It comes out moist with large soft flakes, ready to eat cold or warmed. A 1kg side is the centrepiece size, feeding a table as it is with potato salad and a mustard or dill sauce.
