Calasparra is one of only three Spanish rices with Denominacion de Origen status, grown on river terraces at Calasparra in Murcia that were first built under the Moors. The short grain matures slowly and absorbs around two and a half times its weight in liquid while staying firm and separate, which is exactly what a paella or any stock-led rice asks of it. Use good stock: this rice will taste of it. 500g cloth sack.
