Gravadlax is cured rather than smoked: John Ross Jr hand cures Scottish salmon to a Scandinavian recipe with salt, molasses and dill, so the flavour is clean, sweet and herbal where smoked salmon is smoky. D-sliced and ready to serve, it wants the classic sweet mustard and dill sauce, rye bread and perhaps a cold aquavit. A 200g pack serves three to four as a starter.
