Blinis from Le Comptoir du Caviar, made in Brittany by a creperie the caviar house has worked with for over twenty years, to an exclusive recipe of wheat flour, fresh eggs, sunflower oil and fromage frais. The fromage frais keeps them soft and slightly tangy. Warm them briefly, then top with creme fraiche and whichever roe the occasion allows, from lumpfish to caviar. Smoked salmon works too.
