Raw king prawns peeled and deveined with the tail segment left on, graded 16/20, which means 16 to 20 prawns to the pound: a proper handful each. The tail is not decoration, it is a handle, which is why this is the cut for prawn cocktails with attitude, tempura and anything served with a dip. Individually frozen; thaw in cold water, dry and cook hot and fast.
