What it is

Brown shrimp are the tiny brown-grey shrimp of British shores, sold ready cooked and often peeled. They are the shrimp for potted shrimp, the traditional dish of little shrimp set in spiced butter. We sell them cooked, peeled or in the shell, by weight.

Why choose it

Brown shrimp are small, sweet and intensely flavoured, and they carry far more taste than their size suggests. Sold cooked, they are ready to fold into butter, scatter over fish or eat by the spoonful. Peeled, they save you a fiddly job.

How it tastes

Sweet, nutty and deeply savoury, with a firm little bite and a concentrated shellfish flavour. They are more intense and more moreish than a larger prawn, and the spiced butter of potted shrimp shows them off.

How to cook it

They are sold cooked, so no cooking is needed. For potted shrimp, warm butter with mace, nutmeg, a pinch of cayenne and a squeeze of lemon, fold in the peeled shrimp, pot them and chill until set. Serve with hot toast. They also scatter over grilled fish, fold through scrambled eggs or top a fillet of plaice.

How long it takes

No cooking, so a few minutes to peel if they are in the shell, or none if we peel them for you. Potted shrimp take minutes to make and an hour or two in the fridge to set. Toast to order.

Brown shrimp are high in protein and low in fat before the butter, and they carry selenium, B12 and iodine. The potted version gains calories from the butter, so treat it as a rich starter.
