Skate wing gives long strands of sweet white flesh laid over a fan of soft cartilage, with no true bones to pick around. The strands lift away cleanly with a fork once cooked, and the flavour sits close to scallop in its sweetness. Buy it fresh and cook it within a day or two, as skate does not keep like round fish.
We sell the wing at the Barnes counter cut into steaks, skinned and trimmed by hand to the weight you want.
The classic is brown butter. Dust the wing in flour, fry it three to four minutes a side, then finish the pan butter with capers, parsley and a sharp splash of vinegar.
