Brindisa's cooking chorizo is made in La Rioja by a family firm four generations into the craft: Spanish pork seasoned with mild oak-smoked paprika, salt and spices. It is a fresh sausage, so it needs cooking, and that is the point: as it fries it releases its paprika oil, which seasons everything else in the pan. Cook it with prawns and sherry, drop it into a fish stew or grill it whole. Contains milk.
