Potted crab from Seafood & Eat It of Newlyn, supplied frozen: hand-picked Cornish crab lifted with lime and gentle spice under a sealing layer of spiced butter. Potting is the old English way of keeping shellfish, and freezing simply extends it. Thaw in the fridge, bring to room temperature so the butter softens, then spread thickly on hot toast. 50g pot.
