A side of salmon is the piece that feeds a table. Pin-boned by hand, cooked skin down on foil with the edges turned up so the juices stay under it. One piece, one flip at most.
Around it, whole fish scored at the counter, prawns in the shell and squid. Squid has no flake and no middle ground. Two minutes a side or forty minutes in a pot, nothing between.
What is in the box
- 1 side of salmon, about 1.2kg, pin-boned
- 4 whole mackerel, about 800g in total
- 2 whole sea bass or sea bream, about 800g in total, scored
- 600g raw tail-on king prawns
- 500g squid, cleaned and cut into tubes
- 2 flavoured butters, 90g each
Everything here is whole, skin on or in the shell, because that is what holds up over coals. The flaky white fish stays out of this box on purpose.
Subject to the market. The list above is what we aim to pack and the counter changes with the market and the weather. If something is not there we swap within the list below. The swap is the same price or better and the change is written on the packing note.
- Oily fish: mackerel, herring or sardine. All are soft and high in fat and all collapse the moment they are overcooked.
- Whole round fish: sea bass or sea bream. We score whichever one comes.
- Butters: whichever two flavours we have that day.
- The side of salmon is fixed.
How you want it cut. Tell us at checkout. We pin-bone the side and score the round fish as standard. Gutting, filleting and skinning are free and we do them by hand.
Weights. Weights are approximate because fish are cut by hand. We pack to at least the weight shown.
Keep and storage. The box travels chilled with a gel pack. Unpack it into the fridge as soon as it arrives. Eat fresh fish within a day or two of delivery. Most lines freeze well on the day they arrive.

Cut to order
Tell us how you want it in the order notes. Filleting, pin-boning and skinning are free, by hand at the counter. If you ask for a fish to be trimmed, headed or skinned, the finished weight comes down accordingly.

Our promise
If it is not right, we make it right. Tell us and we will sort it. Local customers can bring it back to the counter and we will replace it.
