For the confident cook who has the rice and the larder. The three stars only: 150g salmon, 150g tuna and four scallops, all cut and cleaned for eating raw.

Slice against the grain with a sharp knife, arrange on a chilled plate and serve with soy and wasabi.

Keep and storage. The box travels chilled with a gel pack. Put it straight into the fridge when it arrives. This box is cut for eating raw, so eat it the day it arrives.

How to cook it

Everything arrives cut and cleaned for eating raw. Keep it cold until the moment you serve.

Slice the salmon and tuna against the grain, about half a centimetre thick, with your sharpest knife.
Slice each scallop across into two or three thin rounds.
Arrange on a chilled plate with soy, wasabi and pickled ginger.

Recipe

Salmon and tuna rice bowls, for two

You need: the salmon and tuna from the trio, 300g short-grain rice, rice vinegar, soy sauce, half a cucumber, sesame seeds.

Cook the rice, then season it while warm with two tablespoons of rice vinegar and a pinch of sugar and salt.
Cube the salmon and tuna and slice the cucumber thinly.
Divide the rice between two bowls and arrange the fish and cucumber on top.
Finish with soy and a scatter of sesame seeds.

Storage and preparation

Cut for raw eating, so treat it gently. Keep it in the coldest part of the fridge and eat it the day it arrives.

If plans change, cook it. All three take well to a hot pan.

Tell us how you want it in the order notes. Filleting, pin-boning and skinning are free, by hand at the counter. If you ask for a fish to be trimmed, headed or skinned, the finished weight comes down accordingly.
