Maldon sea salt has been made on the Essex coast by the Osborne family since 1882, drawn from the Blackwater estuary and hand-harvested into the pyramid flakes cooks recognise on sight. The flakes crush between the fingers and dissolve cleanly, which is why it is a finishing salt: over a just-cooked fillet, grilled prawns or tomatoes, added at the end rather than in the pan. 250g box.
