Scottish salmon smoked traditionally in John Ross Jr's Aberdeen brick kilns, then infused with The Balvenie single malt. The whisky does not dominate: it rounds the smoke with a honeyed warmth that suits the fish. Serve it simply so the cure can speak, with brown bread, butter and a wedge of lemon. D-sliced, 200g, serves three to four as a starter.
