The house style of John Ross Jr, fish curers in Aberdeen since 1857 and Royal Warrant holders: Scottish salmon cold smoked over oak and beech chippings in red brick kilns old enough to be listed by Historic Scotland. The result is a balanced, softly smoky salmon that needs nothing beyond lemon, pepper and good bread. D-sliced, 200g, serves three to four as a starter.
