A Swedish-style dill and mustard sauce from John Ross Jr of Aberdeen, the smokehouse established in 1857 and holder of a Royal Warrant as fish merchant and curer. Sweet mustard, white wine vinegar and dill in the traditional balance for cured salmon. This is the sauce Scandinavia serves with gravadlax, and it works just as well spooned beside cold smoked salmon or a fillet of hot smoked trout.
