A 100g tin of Osietra, the classic caviar of the Russian sturgeon, Acipenser gueldenstaedtii, farmed and CITES certified. Medium grains in brown and gold, nutty with a clean saline end. At this size it stops being a taste and becomes a course: six or more people, blinis, creme fraiche, chopped egg and chives for the traditionalists. Keep on ice, eat within a day or two of opening.
