The 100g tin of golden-grain sturgeon caviar, the pale amber grade selected for colour and a mellow, creamy, nutty flavour. This is the size for a table: six or more with blinis, creme fraiche and cold champagne, or the centre of a New Year spread. Keep it on ice once opened, use mother of pearl rather than metal and finish it within a day or two, which will not be difficult.
