Iberico Ham 100g

Iberico means the breed: the black-hoofed Iberian pig native to Spain, cured in sea salt and matured slowly for years rather than months. The fat is the point, high in oleic acid, and it melts at room temperature, so take the slices out of the fridge twenty minutes before eating. Serve it on its own with bread, or the Spanish way alongside a plate of prawns and a cold glass of fino. 100g sliced.
