White fish and salmon, ordered by how long they hold. White fish is lean and goes first. Salmon carries enough fat to keep a day longer and to forgive a minute too long in the oven.

Fish fingers are in the box on purpose. They go in the freezer and the fresh fish does not.

White fish: haddock, hake, pollack, gurnard or plaice. Haddock flakes finer than cod. Hake and pollack are softer and break more readily. Gurnard is dense and on the dry side. Plaice is thin and cooks in a minute.

How you want it cut. Tell us at checkout. Ask for the salmon in four portions and we will cut it that way. Filleting, pin-boning and skinning are free and we do them by hand.

Weights. Weights are approximate because fish are cut by hand. We pack to at least the weight shown.

Keep and storage. The box travels chilled with a gel pack. Unpack it into the fridge as soon as it arrives. Eat fresh fish within a day or two of delivery. Most lines freeze well on the day they arrive.

Packed by hand at our counter at 18 Barnes High Street.

We buy for the counter first and pack the boxes from the same fish. That is why this box carries a swap list. What is good changes through the week, and choosing well is the job. The packing note inside tells you what changed.

How to cook it

Salmon: 200C for twelve minutes on a tray, skin down, or five to six minutes a side in a hot pan.
White fish: 200C for ten to twelve minutes, or four to five minutes in a pan turning once.
Fish fingers: oven from frozen, following the pack.

Fish is cooked when it flakes under gentle pressure. If you are guessing, take it out. It carries on cooking on the plate.

Recipe

Tray-baked salmon with potatoes and peas

You need: the salmon, 700g small potatoes, a bag of frozen peas, olive oil, a lemon.

Halve the potatoes, toss them in oil and salt and roast at 200C for twenty-five minutes.
Push them aside, sit the salmon on the tray and give it twelve minutes more.
Throw the peas on for the last three minutes and squeeze the lemon over the lot.

Storage and preparation

Keep the fresh fish in the coldest part of the fridge and cook it within two days of arrival. The fish fingers go straight in the freezer.

Both fillets freeze wrapped tight for a month. Thaw overnight in the fridge. Cook the white fish first and keep the salmon for the second meal, because salmon holds a day longer.

Tell us how you want it in the order notes. Filleting, pin-boning and skinning are free, by hand at the counter. If you ask for a fish to be trimmed, headed or skinned, the finished weight comes down accordingly.
