Chalkstream trout is rainbow trout raised in the fast, clear water of English chalk streams. The constant flow keeps the fish lean and firm, with pale pink flesh, a fine flake and a cleaner, more delicate flavour than salmon.
At the Barnes counter we prepare it whole and cleaned, as a full fillet or cut into portions, pin-boned by hand. A whole fish suits baking in foil, and portions behave in the pan much like a slim salmon fillet.
Pan-fry a portion skin-side first for three minutes then a minute on the flesh, roast at 180C for 10 to 12 minutes or bake a whole fish with lemon and dill. Take it off as it just flakes.

Tell us how you want it in the order notes. Filleting, pin-boning and skinning are free, by hand at the counter. If you ask for a fish to be trimmed, headed or skinned, the finished weight comes down accordingly.
