Smoked cod's roe is the whole roe of the cod, cured and smoked until firm and deep pink. It is the base of proper taramasalata: skin it, then beat the roe with bread, oil and lemon. It is also good sliced and briefly fried, or shaved thinly over buttered toast. A little seasons a lot. Sold by weight.
