Wild sea bream is a firm white fish with sweet flesh and a moderate flake that holds together well. Wild fish run firmer and deeper in flavour than farmed, and the skin is a feature in itself, crisping to a thin crackle over the moist flesh beneath.
At the Barnes counter we prepare it whole and cleaned, trimmed, headed or filleted and pin-boned by hand. We scale it as standard and leave the scales on if you ask, which protects the flesh over coals or under a salt crust.
Roast a whole fish at 200C for 20 to 25 minutes or pan-fry fillets skin-side first for three to four minutes. Fennel, lemon and olive oil are the natural direction.
