Rock lobster carries nearly all of its meat in the tail, which is why the tails are sold on their own. The flesh is firm, sweet and denser than native lobster. Thaw slowly in the fridge, split the shell lengthways and grill cut side up with plenty of butter, or poach gently and serve cold with mayonnaise. Sold frozen in a 1kg pack.
