Red snapper is a warm-water fish with firm, moist flesh and a mildly sweet flavour that holds its own against big seasoning. The flakes are large and stay intact through roasting, which is why it is so often cooked whole, and the red skin crisps and keeps its colour.
We prepare it at the Barnes counter whole and cleaned, trimmed, headed or filleted by hand, scaled as standard or scale on for the grill.
Roast a whole scored fish at 200C for 20 to 25 minutes, stuff the cavity with lime, chilli and thyme in the Caribbean way or pan-fry fillets skin-side first. Escovitch pickle and rice finish it properly.
