Octopus sold raw and frozen, and the freezing works in its favour: ice crystals break down the muscle fibres and start the tenderising for you. Simmer it gently for 45 minutes to an hour until a knife slips into the thickest part, then finish it on a hot grill with olive oil, lemon and smoked paprika. 1kg, frozen.
