The U5 grade means under five prawns to the pound: these are the giants of the box, wild-caught tropical Atlantic prawns from Prim7Stars, sold headless and shell-on in a 2kg pack. Prawns this size are cooked like small lobsters: split them down the back, brush with garlic butter and grill or barbecue in the shell. One or two per person is a main course.
