Wild-caught tropical Atlantic prawns from Prim7Stars at a 6/8 count, six to eight prawns per pound, headless and shell-on in a 2kg catering pack. This is the grilling grade: big enough to butterfly and cook in the shell, small enough to serve three or four per plate. Thaw slowly in the fridge, keep the shells on through the heat and let people peel at the table.
Delivery and collection
Order by 1pm for next-day delivery across London and the UK. Same-day collection in Barnes, usually about two hours.
