Paw Whole Scampi (langoustines) 700g

Whole langoustines, frozen, 700g net. The langoustine is the slim orange cousin of the lobster, sweet and delicate, and scampi is what we call its tail meat. Whole ones are worth the fiddle: split lengthways and grill with garlic butter for two or three minutes, or boil briefly and serve with mayonnaise. The heads make a stock that outclasses the meat. Thaw slowly in the fridge.
