Cockle meat from Osborne Bros of Leigh-on-Sea, a fifth-generation Essex family firm working the Thames Estuary cockle beds. The cockles come in by boat, are cooked and washed the same day and frozen straightaway, all meat and no shell. Defrost and eat them with vinegar and pepper, or warm them briefly through pasta, chowder or a seafood rice. Do not recook them hard or they toughen. 1kg bag, frozen.
