Mackerel is an oily fish with soft, rich flesh and a bold savoury flavour that stands up to smoke, heat and acidity. Very fresh mackerel is clean and almost sweet, and freshness matters more here than with most fish, so look for bright, firm skin and a clean smell of the sea.

We prepare it at the Barnes counter whole and cleaned for the grill or filleted and pin-boned by hand for the pan.

Grill fillets skin-side up until the skin blisters, pan-fry them skin-side first for two to three minutes or bake a scored whole fish at 200C. Sharpness cuts the oil, so reach for gooseberry, rhubarb, horseradish or pickled vegetables.

Storage and preparation

Keep it wrapped on the coldest shelf of the fridge, usually the bottom shelf at the back, and use it within one to two days. It freezes well for two to three months because of the oil, so wrap it tightly, freeze it as soon as you can and defrost in the fridge overnight.
