A kipper is a whole herring split down the back, brined and smoked. The flesh is rich and oily with a deep smoky flavour. Grill them with butter or jug them: stand in a tall jug, cover with boiling water and leave for ten minutes. Good with brown bread and a squeeze of lemon. Sold by weight.
