A single gram of saffron threads, which is less modest than it sounds: saffron is the hand-picked stigma of the crocus flower, roughly one hundred and fifty flowers to the gram, and a pinch is a dose. Steep a few threads in warm water or stock and add both liquid and threads to the pan. It belongs in fish soup, paella, risotto and a saffron butter for grilled white fish.
