The 50g tin of Osietra caviar, from farmed Russian sturgeon, Acipenser gueldenstaedtii, under CITES certification. Osietra's medium grains run from brown to gold and carry the nutty, faintly marine flavour that made this species the classic. Fifty grams serves three to four properly: chilled tin, blinis, creme fraiche and something cold and dry alongside.
