Osietra is the caviar most people mean when they imagine caviar: eggs of the Russian sturgeon, Acipenser gueldenstaedtii, farmed under CITES certification, medium grains in brown and gold with the classic nutty flavour and a suggestion of the sea at the end. A 30g tin is a private luxury for two. Serve it cold and unaccompanied first, then allow the blinis in.
