The 50g tin of the golden selection: farmed sturgeon caviar graded for its pale amber to gold eggs, the scarcest colour in the tin room. The flavour tends mellow and creamy with the nutty osietra character. Fifty grams serves three to four. Serve it cold with blinis and creme fraiche, or spoon it over just-scrambled eggs when breakfast has something to celebrate.
