Herring is a small oily fish with soft, rich flesh and a full flavour close to sardine and mackerel. The oil keeps it moist under a grill and carries the omega 3, and the fine bones soften noticeably when the fish is soused in vinegar.
At the Barnes counter we sell it headed and gutted for the grill or filleted by hand, which deals with most of the fine bones for you.
Grill or barbecue it for two to three minutes a side until the skin blisters, coat fillets in oatmeal and fry them in the Scottish way or souse them in vinegar with onion and bay. Sharp accompaniments cut the oil: mustard, beetroot and pickled cucumber.

Tell us how you want it in the order notes. Filleting, pin-boning and skinning are free, by hand at the counter. If you ask for a fish to be trimmed, headed or skinned, the finished weight comes down accordingly.
