Hamachi is the Japanese name for young yellowtail, a fish with rich buttery flesh and a clean finish. It is one of the few fish that is as good raw as it is cooked: slice it thin for sashimi or crudo with citrus and good oil, or cut thick portions and sear them briefly so the centre stays rare. Sold as frozen sides, 1kg.
