Goldstein Whole Sides

A whole sliced side of Goldstein smoked salmon, the centrepiece format from London's veteran family curers, smoking since the early 1900s. Each side is given the mild London cure, dry cured then smoked slowly over oak dust, and sliced ready to lift. A side runs to roughly a kilo and feeds a party: lay it out with lemon, capers, rye and brown bread and let people help themselves.
