The 400g pack of Goldstein smoked salmon, cured and smoked in London by a family four generations deep in the trade. Their mild London cure, a dry cure followed by slow smoking over oak dust, was built for exactly this kind of eating: platters, gatherings and the sort of breakfast that stretches to lunch. Take it out of the fridge a quarter of an hour before serving.
